How to map a different key for Command and other modifiers

Terry Ogletree prefers some older, expensive mechanical keyboards he already has on hand to the newer Apple keyboard style that ships with Macs. (Very reasonable!) But these weren’t designed for a Mac, and there’s no key labeled Command.

Is there an alternative key or combination of keys I can use with a keyboard that is not an Apple-produced one to emulate the Command key?

It’s even easier than that. When you plug in a keyboard that doesn’t tell Apple it’s designed for macOS, you should be presented with the Keyboard Setup Assistant. (You can force it to appear again via the Keyboard system preference pane in the Keyboard tab by clicking Change Keyboard Type.)
